Herb-Crusted Pork Loin Roast

A boneless rolled pork loin roast is perfect for feeding a crowd and easy enough for Sunday dinner. This version features a simple herb crust that creates a flavorful outer layer while keeping the meat juicy. It’s great sliced thin for sandwiches or served hot with your favorite side dishes.

Ingredients

  • 1 Joe’s Reserve Boneless Rolled Pork Loin Roast (3–4 lbs)
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp rosemary, chopped
  • 1 tbsp thyme, chopped
  • 4 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. In a bowl, mix olive oil, mustard, rosemary, thyme, garlic, salt, and pepper into a paste.
  3. Rub mixture all over roast and place in a roasting pan.
  4. Roast for 1.5 hours or until internal temp reaches 145°F.
  5. Let rest for 10–15 minutes before slicing and serving.
