Ingredients

  • 4 large cod loins (from Joe’s)
  • 2 tbsp olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 tsp thyme or parsley
  • Salt and pepper

Instructions

  1. Preheat oven to 400°F.
  2. Place cod in a baking dish and drizzle with olive oil.
  3. Sprinkle with lemon zest, juice, garlic, herbs, salt, and pepper.
