Marinated London Broil with Chimichurri

Ingredients

  • 1.5–2 lb Joe’s Reserve London Broil
  • 1/4 cup olive oil
  • 3 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • 3 garlic cloves, minced
  • For chimichurri:
    • 1/2 cup chopped parsley
    • 1/4 cup olive oil
    • 1 tbsp red wine vinegar
    • 1 garlic clove, minced
    • Salt & pepper

Instructions

  1. Combine olive oil, soy sauce, vinegar, and garlic. Marinate steak for at least 4 hours.
  2. Preheat broiler and place steak on a broiler pan. Broil 4–6 minutes per side.
  3. Let rest 10 minutes, then slice thinly against the grain.
  4. Mix chimichurri ingredients and spoon over sliced steak.
