Boneless leg of lamb is a fantastic choice when you want bold lamb flavor with easier carving and even cooking. This version is seasoned with garlic, rosemary, and thyme, then slow-roasted until it’s juicy and tender. It’s perfect for Easter, Sunday dinner, or whenever you’re feeding a hungry crowd.

Ingredients

  • 1 Joe’s Reserve Boneless Leg of Lamb (about 4–5 lbs)
  • 4 garlic cloves, minced
  • 2 tbsp fresh thyme
  • 1 tbsp rosemary
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • Salt and black pepper

Instructions

  1. Preheat oven to 325°F.
  2. In a small bowl, mix garlic, herbs, olive oil, lemon zest, salt, and pepper.
  3. Rub the mixture all over the lamb. Tie it with kitchen twine if not pre-tied.
  4. Place in a roasting pan and cook for 1.5 to 2 hours, or until internal temp reaches 135°F.
  5. Let rest 10–15 minutes before slicing and serving.
